Best Nigerian Yam Porridge With Vegetables Recipe

Vegetable yam In Igbo is called( ji akwukwo nri), this recipe is a basic yam and vegetable mix which can easily be made in no time . It also allows u to try  a wide range of leafy vegetables.

 This porridge is made with boiled yam ogiri, red oil, onion etc. vegetable yam porridge   is a healthy meal that gives nutrient and vitamin to the body.

INGREDIENTS

  • 1kg white  yam
  • Absolute any vegetables of ur choice ( Spinach, ugu leaves and water Leaves)
  • Red palm Oil
  • 1 handful Ukpaka
  • 1 handful Ugba
  • 3 medium onions
  • ½ Knorr cube

PROCEDURE

Wash your  green vegetables then cut into preferable size of your choice and set aside.

Wash your yam and cut into small  pieces then add in a clean pot, allow the yam to Cook until it is soft but not too soft. After that add your chopped vegetables leave for 1 minute,  separate the yam and vegetables together  from  the hot water and set aside.

In a pan slightly heat up your palm oil on a low heat, add the sliced onion, pepper, Ugba, Ukpaka, knorr cube, salt  and  allow to saute for at least  2-3 minutes.

Bring down the pot and add ur yam with vegetables and combine probably using a turning stick( not spoon), place the pot back and allow to simmer for 2 minutes, when that is done turn off ur gas and serve warm immediately.
