Nigerian Coconut Rice Recipe

Coconut rice is much loved around the world, it is also a spicy dish that comes with sweet flavour.

It is an easy and quick meal to make that is prepared with ground crayfish, peppers etc. The addition of smoked mackerel and pepper makes this meal nutritious to the body.

Coconut Rice is also one of my favorite rice recipe. My sister would cook it during occasions and special events. And my junior sisters and I would hurrily bring our plates once food is ready.

I was craving for it recently so I had to make it and it was no different from the one my sister prepares.

I have good news for all my lazy cooks out there. This delicacy takes an hour or 2 to prepare, so for those of you that doesn’t like to wait for long this recipe is sure a go.

INGREDIENTS

• 2 cups Rice • 2 cups freshly grated coconut milk
• 3 diced tomatoes
• 2 large habanero peppers( also known as chili pepper)
• 1 diced green pepper
• 2 diced yellow onion
• 1⁄4 vegetable oil
• ½ teaspoon salt
• 1teaspoon black pepper
• Smoke mackerel( optional)

DIRECTIONS

Boil your rice for about 15-20 minutes till it is soft but not too soft because you will cook it for some more.

In a pot heat your vegetable oil, add your diced onions then stir, add black pepper and stir for another 2 minutes.

When that is done add your habaneros( chili pepper), diced tomatoes, your coconut milk and salt then cover to cook until when the mixture comes to a boil.

Add your rice, smoked mackerel and cover until when the rice is almost dry. After that add your green peppers and allow to simmer until the rice has absorbed all the juices.

Then your delicious coconut rice is ready, it can be served with fried plantain, chicken, fish and chilled juice
