Nigerian Jollof rice – The Ultimate Recipe

Jollof rice is one of the most popular Nigerian meals which is easy to prepare especially during rush hour. Nigerian jollof rice is a delicious meal that you should try to make. The ingredients are easy to find so this meal is perfect if you’re hosting visitors or you just want to eat something delicious.

When you make jollof rice, there are a few key steps to remember. Everyone will have their own way of making jollof rice with slight differences in ingredients and preparation methods.

So, this is my own special recipe for making delicious Nigerian Jollof Rice.

Ingredients
2 cups (500g) rice of your choice
4 large plum tomatoes
2 tablespoons tomato paste
1 medium size onions
1 large red pepper
1 scotch bonnet (yellow)
½ tablespoon thyme
2 tablespoons of ground nutmeg
1 tablespoon of ground ginger
1 tablespoon of garlic
1 tablespoon curry powder
2 seasoning cube
2 cups of good quality chicken stock
Vegetable oil
Crayfish
1 serving spoon of vegetable oil
Bay leaves
Benny Seasoning
Salt to taste and
Some hot water


Procedure
In a pot add your chicken with thyme, curry, benny, garlic, nutmeg, Knorr cube, ginger, and onion, add a little water and cover it on low heat to cook for 30 minutes, then remove the chicken stock and set aside.

Blend the tomatoes, pepper, scotch bonnet, and onion in a blender.
On a low heated pan add your vegetable oil, onion, garlic, ginger, and tomato, and stir until it turns a little bit brownish.

Add ur blend and allow to fry for about 10 minutes on a very low heat to avoid burning. Once that is done add ur chicken stock and some hot water, and allow it to boil on high heat.

Add ur parboiled rice and bay leaves allow to cook for 20 minutes. open the pot and check if the rice still needs water, if yes u add it little by little to avoid it from getting over soft, add salt and Knorr cube if needed n cover the pot.

When all the water/ moisture has evaporated, then stir very well to distribute seasoning. Bring the pot down and you have your sumptuous Jollof rice.

Jollof rice can be served with fried chicken and fried plantain or other exciting side dishes like moin-moin or a nice crisp salad. Try this recipe and thank me later.
